The traditional Aussie outback bread

Ingredients:

- 1 packet self-raising flour (or plain flour and baking powder)
- pinch of salt
- some water

Instructions:

- Place flour and salt into a bowl.
- Slowly add water and lightly mix in with flour. (Make sure that care is taken when mixing this and that it is not beaten. Add water until there is a consistent dough mix, which stays in a ball shape.)
- Place dough in a tin, a camp oven or a couple of layers of tin foil. (Ensure that the tin or camp oven is lightly greased and floured before.)
- Place in hot coals or oven for about 40 minutes.
- Check regularly until the outside is light brown and the centre is not doughy by using a skewer or a small knife, if it comes out clean bob’s your uncle.

For the more adventurous try adding fruit spices, sugar, milk for a yellow, sweeter damper or a tinny of VB beer (slowly add 3/4 can to the dough, and make sure the remainders are drunk by the chief). Damper is meant to be eaten hot and is excellent with butter and golden syrup or honey, also vegemite! Make sure that lots of mates are around for this is more than enough for about 6-8.
