Minted Raita
Can be served with Lebanese bread for an appertiser or an accompaniment with a main meal.
Ingredients:
- 1 lebanese cucumber (or close to) - 1/2 cup greek style natural yogurt - 2 tabs chopped fresh mint - Pinch of salt
Instructions:
- Cut cucumber in quarters lengthways. Remove and disard seeds, finely chop cucumber. - Place cucumber in a bowl and sprinkle salt over the top, leave for a few minutes until you see juices appear. - Combine cucumber with yogurt and mint in a small bowl. Cover and refrigerate until ready to serve.
