
This is a delicious twist on the traditional American Meat Loaf (the type you bake, not the type that is a "bat out of hell" ). I found this recipe years ago in "The Everything One-Pot Cookbook" by Lisa Rojak. I promise you it is amazing. Even if you hated your mom’s crumbly, crappy excuse for a delicious meaty dinner, give this a try. Also remember to check out our article about measurements to help with conversions.
Ingredients
2 1/2 pounds lean ground beef
1 1/2 cups herb-seasoned stuffing mix
2 cups peeled, finely chopped apples (I prefer Granny Smith)
3 eggs, slightly beaten
1 teaspoon salt
2 tablespoons prepared mustard
2 tablespoons horesradish
1 onion, finely chopped
3/4 cup ketchup
Instructions
Preheat the oven to 350 degrees F.
Mix all ingredients together, well, in a large bowl.
Pack it into a large loaf pan.
Bake for 1 hour and 15 minutes or until cooked through.
Let it rest for 10 minutes before even thinking about cutting it, or else you get big piles of meat loaf, and not really spiffy looking slices.
