This is a delicious twist on the traditional American Meat Loaf (the type you bake, not the type that is a "bat out of hell" ). I found this recipe years ago in "The Everything One-Pot Cookbook" by Lisa Rojak. I promise you it is amazing. Even if you hated your mom's crumbly, crappy excuse for a delicious meaty dinner, give this a try. Also remember to check out our article about measurements to help with conversions.

Ingredients - 2 1/2 pounds lean ground beef - 1 1/2 cups herb-seasoned stuffing mix - 2 cups peeled, finely chopped apples (I prefer Granny Smith) - 3 eggs, slightly beaten - 1 teaspoon salt - 2 tablespoons prepared mustard - 2 tablespoons horesradish - 1 onion, finely chopped - 3/4 cup ketchup

Instructions - Preheat the oven to 350 degrees F. - Mix all ingredients together, well, in a large bowl. - Pack it into a large loaf pan. - Bake for 1 hour and 15 minutes or until cooked through. - Let it rest for 10 minutes before even thinking about cutting it, or else you get big piles of meat loaf, and not really spiffy looking slices.
