The Great Kiwi Burger

Even thinking about writing this recipe makes me drool. It's the great Kiwi Burger that reminds us Kiwis of beach days, bbqs, and summertimes in New Zealand that seem to last forever.

Ingredients:

- 400g lean beef (vege options: lentils, beans...) - 2 eggs - 1 cup bread crumbs - 1 tablespoon tomato paste - 1 onion - Garlic (optional) - 2 teaspoons of mixed herbs (optional) - 4 bread rolls - 4 lettuce leaves - 1 kiwifruit - sliced (optional) - 1 large tomato - 4 slices of tinned beetroot - 1 grated carrot - 4 Pineapple Rings

Instructions:

- Mix the mince, breadcrumbs, garlic, herbs, onion, tomato paste, and one egg together. - Shape the mixture into four patties. - Cook the patties in a non-stick pan until cooked. - While patties are cooking, fry the second egg, grate the carrot and split the bread rolls. - When the patties are cooked, place on a bread roll. - Add the grated carrot, kiwifruit, lettuce, tomato, beetroot, pineapple, and egg. - Add your Watties tomato sauce and eat!

This recipe is not restricted to the above ingredients, so go wild!!! I tend to throw in a few mushrooms, peanut butter occassionally, mayo, and anything else. Great for the day after a big night & fantastic for bbqs!
